Salsa and Chips

I have been promising my salsa recipe sorry it took so long I think from now on I am going to make Tuesday's post a new recipe I just don't have time to post to my cooking blog alot but I have lots of easy recipes to share. I am all about the easy and good so here goes...

(I used fresh veggies from our garden all summer but I also made this with canned tomatoes and it turned out just as good)

6 to 8 med to large Roma tomatoes or 2 large cans of crushed or whole tomatoes
2 cloves of garlic - minced
Green bell pepper -cut thinly
1 jalapeno pepper chopped (remove the seeds for less heat)
1 med onion chopped thinly
1/4 c. or less or more depending on your taste of cilantro
juice of one lime
salt and pepper to taste

par boil tomatoes (couple of minutes until you can remove skins)
mash tomatoes and bring everything to boil simmer until onions are transparent

puree everything in a blender or food processor

cool in fridge and eat up!

Okay I am so excited that The Goonies are coming on tonight Tivo is ready I love this movie. Noah is just as excited as me, Brinsley and Johnny don't quite get it.

Oh My gosh The Goonies - I loved that movie - an oldie but a goodie!

Your salsa looks so good. I have never made it - I am going to have to give it a try. I could eat salsa and chips all day - Yes I can!!

Is there anything better in life than homemade chips and salsa and a Diet Coke? I think not! Thanks for the recipe. Makes me hungry just thinking about it.

Yum, sounds delicious. There is almost nothing better than chips and salsa. Sounds like a great recipe. I haven't made fresh salsa in years.
